Jerez

The region around Jerez de la Frontera in Andalusia, southern Spain is the home of fortified sherry wine.  Palomino grapes are used to produce pale, dry sherries which can be served chilled and make excellent accompaniments to food. Fino sherry is delicate with an almond character whilst Manzanilla has salty notes; Amontillado is darker in colour but with complex and nutty flavours.  Pedro Ximénez grapes are used to produce rich and velvety sweet sherries with notes of raisin, fig and chocolate.
